Aurora Ice Cream

INGREDIENTES

  • Peel of 1 lemon (without the pith)
  • 150 g (5 oz) almonds, sliced and toasted
  • 7 cloves
  • ½ tsp ground cinnamon
  • 100 g (3 oz) icing sugar
  • 100 g (3 oz) granulated sugar
  • 1 lt (4 cups) water
  • 3 egg yolks

INSTRUCCIONES

  • Step 1 – Combine the lemon peel, almonds, cloves, cinnamon, icing sugar, granulated sugar and water in a blender. then strain.
  • Step 2 – Place the mixture in a pot and bring to a boil. Remove from heat and add the egg yolks, stirring constantly. Return to a low heat and cook until the mixture thickens. Pour into a pudding mold and let cool.
  • Step 3 – Freeze until it becomes ice cream.
  • Step 4 – Garnish with almond slices and serve.
