Bean Salad

  • 1 cup dried beans of choice
  • 1 onion, diced
  • 2 tbsp parsley, finely chopped
  • Sunflower oil
  • Lemon juice or vinegar to taste
  • Salt to taste
  • Lettuce leaves
  • Tomato and olives to decorate


  • Step 1 – Soak beans in cold water for 8 to 12 hours. Drain soaking water. Place beans, fresh water and salt in a saucepan and cook until soft yet firm. Leave to cool in the cooking liquid.
  • Step 2 – Dice the onion. Rub it with a tbsp of sugar. Rinse in cold water. Drain and set aside.
  • Step 3 – To assemble the salad, remove beans from their cooking liquid and place them in a bowl with the onion and parsley.
  • Step 4 – Dress the salad with salt, lemon juice or vinegar and oil.
  • Step 5 – Stir well to combine all ingredients. Correct the salt and place in a serving dish.
  • Step 6 – Decorate with a sprig of fresh parsley.
