Beef Brisket Stew

INGREDIENTES

  • 6 portions of brisket
  • 2 garlic cloves, fresh oregano to taste
  • 2½ lt (10 cups) water
  • Salt to taste
  • 1 tsp oil
  • 1 onion, sliced lengthwise
  • 1 carrot cut in batons
  • ¼ red bell pepper, cut in strips
  • 6 to 10 potatoes, peeled
  • 6 portions pumpkin / squash
  • 4 tbsp wide-grained rice
  • 2 or 3 ears of corn, shucked and cut into 6 pieces
  • 1 cup green beans, julienned
  • ⅓ cup podded fresh peas.

INSTRUCCIONES

  • Step 1 – Cook meat, oregano, salt and water in a pressure cooker for 35 to 40 minutes. Set aside.
  • Step 2 – Heat oil in a saucepan and cook onion, carrot, red bell pepper and fresh oregano for a few minutes. Then, add meat and strained broth. Bring to a boil.
  • Step 3 – Add potatoes, squash and rice. Simmer for 10 minutes.
  • Step 4 – Add corn, green beans and peas. Cook until soft.
  • Step 5 – Serve steaming hot. Optional: serve with green chili pepper or green salsa.
