2 or 3 ears of corn, shucked and cut into 6 pieces
1 cup green beans, julienned
⅓ cup podded fresh peas.
INSTRUCCIONES
Step 1 – Cook meat, oregano, salt and water in a pressure cooker for 35 to 40 minutes. Set aside.
Step 2 – Heat oil in a saucepan and cook onion, carrot, red bell pepper and fresh oregano for a few minutes. Then, add meat and strained broth. Bring to a boil.
Step 3 – Add potatoes, squash and rice. Simmer for 10 minutes.
Step 4 – Add corn, green beans and peas. Cook until soft.
Step 5 – Serve steaming hot. Optional: serve with green chili pepper or green salsa.
