Candied Papaya Balls

  • Fresh Chilean papayas
  • Sugar
  • 1 tbsp unflavored gelatin powder dissolved in water


  • Step 1 – Peel papayas and cut off ends. Place papayas in a saucepan with cold water. Bring to a boil on high and cook for 1-2 minutes. Drain and cool.
  • Step 2 – Cut papayas in half and remove middle with seeds. Blend papayas in a food processor until it forms a paste. Weigh the paste and weigh out an equal amount of sugar.
  • Step 3 – Place the papaya paste, sugar and previously hydrated gelatin in a saucepan. Bring to a boil over medium heat. Reduce heat and simmer until thickened, continually stirring, until it lifts off the base of the saucepan. Remove from heat and allow to cool overnight.
  • Step 4 – Shape little balls from the mix using your hands. Roll balls in granulated sugar. Leave to dry at room temperature and then store in an airtight container to keep them dry.
