1 kg (2 lbs 3 oz) potatoes, peeled and chopped into small cubes
2 carrots, chopped in small cubes
2 tbsp butter
1 cup milk*
2 tbsp oil
1 onion, diced, salt and pepper to taste
1 tsp paprika
1 tbsp dried oregano
1 tsp ground cumin
250 g (8 oz) yellow cheese (Monterey jack or similar) in small cubes
INSTRUCCIONES
Step 1 – Put potatoes and carrots in a pot of boiling water and cook until soft. Strain, then mash the vegetables. Add butter and a splash of milk* or cooking liquid from the potatoes. Set aside.
Step 2 – Heat the oil in a frying pan and sauté the onion. Add paprika, oregano and cumin and combine well.
Step 3 – Add the sautéed onion to the mashed vegetables and mix.
Step 4 – Preheat oven to 180ºC (350ºF).
Step 5 – Spoon the mixture into individual bowls and spread cheese cubes over the top.
Step 6 – Bake until hot and lightly browned. Serve immediately.
