Chicken Stew

INGREDIENTES

  • 1 whole large chicken, portioned into 6 pieces
  • 2 tbsp vegetable oil
  • ½ tsp paprika, 1 large onion, chopped
  • 1 large carrot, peeled and julienned
  • 1 red bell pepper, deseeded and cut into strips
  • Salt and pepper to taste
  • 10 cups boiling water
  • 6 medium potatoes, peeled
  • 2 tbsp polenta or cornmeal
  • 2 ears of corn, cut into 3 pieces eac
  • 500 g (1 lb 2 oz) squash, cut into 6 pieces
  • 1 cup thin-sliced green beans, finely chopped parsley

INSTRUCCIONES

  • Step 1 – Heat the oil and paprika in a large saucepan and brown the chicken pieces. Add the onion, carrot, herbs and bell pepper and cook for 5 minutes. Add boiling water and salt and pepper to taste. Simmer for 2 to 3 hours or until the chicken is tender.
  • Step 2 – Add the potatoes, polenta or cornmeal, corn and squash. Simmer for 20 more minutes, stirring occasionally.
  • Step 3 – Add green beans and cook until tender.
  • Step 4 – Place one piece of chicken, corn, squash and potato in each bowl. Cover with the broth and remaining vegetables and sprinkle with parsley.
