Step 1 – Wash and clean the cow’s foot. Pass it over a flame on the stove to singe off any hairs. Cook in a generous amount of water in a pressure cooker for 1 hour. Remove from the pressure cooker and reserve the broth. Separate the meat from the bones and cut into irregular cubes. Discard the bones.
Step 2 – Pour into a bowl and mix with onion, garlic and carrot. Add broth and season with salt, chili pepper paste and oregano. Add the peas and then the chopped parsley.
Step 3 – Use to half fill a rectangular mold. Add the hardboiled eggs and fill the mold with the rest of the mixture.
