Step 2 – Make the dough: Sift the flour and salt in a bowl. Make a hollow in the middle and add the eggs, aguardiente or brandy and lard. Knead until the dough is smooth.
Step 3 – Roll the dough with a rolling pin. Fold the dough in half, then repeat the process.
Step 4 – Roll the dough out very thin. Cut into circles with a 7 cm (3 in) diameter. Bake for 3 to 5 minutes. Cool on rack.
Step 5 – Prepare filling: dry cook sugar, flour and spices in a saucepan until brown. Carefully add boiling water, keeping your distance to avoid burns from the steam. Cook until thickened.
Step 6 – Assemble pastries: Place the still warm sugar mixture between two pastries.
Step 7 – Decorate the pastries by crumbling a bit of pastry and rolling the edges of the alfajor in the crumbled pastry.
