Step 1 – Wash the figs and place in a pot with sufficient water and a pinch of salt. Cook for 10 minutes, removing the foam that forms. Remove the figs from the water and prick with a fork, then set aside.
Step 2 – Hollow out the figs with a punch or small spoon. Place the inner part in a bowl.
Step 3 – Mix the filling with the nuts. Fill each fig with the mixture.
Step 4 – In a separate pot, bring the sugar, vanilla and 1 liter of water to a boil over medium heat, stirring until the sugar is dissolved. Add the figs, ensuring that the filling does not come out and boil over a medium heat for 20 minutes. Remove from heat and let the figs rest in the syrup for 24 hours.
Step 5 – Boil the figs over medium heat for 20 minutes. Remove from heat and let rest again until cooled. Continue this process until the figs take on a sheen and turn nearly translucent.
Step 6 – Serve the figs in a small bowl with a generous amount of syrup. To preserve: Place the figs in sterilized jars.
