Flank Roll

INGREDIENTES

  • 1 flank steak
  • Salt to tast
  • 4 tbsp red chili paste
  • 2 garlic cloves, finely chopped
  • Ground cumin, dried oregano
  • 4 tbsp red wine vinegar
  • 4 tbsp water
  • 4 tbsp olive oil
  • Black pepper to taste
  • 2 hard boiled eggs
  • 1 carrot, cut in thin slices
  • 50 g (2 oz) spinach,string
  • Clean dry potato sack or similar cloth

INSTRUCCIONES

  • Step 1 – Trim excess fat from the flank steak. Marinate it in a bowl with salt, chili, garlic, cumin, pepper, oregano, vinegar, water and olive oil.
  • Step 2 – Cover and refrigerate overnight. Remove flank steak from the marinade and lay it out flat on a cloth.
  • Step 3 – Place halved hard boiled eggs, sliced carrot and spinach leaves on the meat.
  • Step 4 – Roll it up using the cloth and tie it with string, securing both ends.
  • Step 5 – Boil in salted water for 2 hours. Leave it to cool in the cooking water.
  • Step 6 – To serve, remove cloth and cut into slices. Serve with a lettuce, tomato and olive salad.
