Fried Ribbons

  • 2 large eggs
  • 4 egg yolks
  • 4 tsp sugar
  • 1 tsp orange zest
  • 1 tsp lemon zest
  • 2 tsp vanilla essence
  • salt to taste
  • 2 tsp ground cinnamon to taste
  • 1 tsp nutmeg to taste
  • 2 tbsp softened butter
  • 3 cups (approx.) sifted flour
  • 1 tsp baking powder
  • Oil for frying
  • Icing sugar or honey to serve


  • Step 1 – Process eggs, yolks, sugar, orange and lemon zest, vanilla, pinch of salt, cinnamon, nutmeg and butter in food processor or blender until homogenized.
  • Step 2 – Place sifted flour in a bowl and whisk in egg mix to form a dough. The dough should not stick to your fingers. Add more flour if necessary.
  • Step 3 – On a flat surface, roll out the dough very thin. Cut into 3×25 cm (1.2×10 in) strips and leave to rest for several minutes.
  • Step 4 – Preheat oil in a deep fryer. Roll each strip into whatever shape you want and deep fry in hot oil until golden. Remove excess oil with paper towels and serve ribbons sprinkled with icing sugar or honey.
