Grilled Beef Stew

  • Grilled skirt steak (or any leftover grilled meat)
  • 1 tbsp oil
  • 1 large onion, sliced lengthwise
  • ½ carrot cut into strips
  • 3 medium potatoes, peeled and cut into wedges
  • 2 garlic cloves, finely chopped
  • 1 tbsp red bell pepper, cut in strips
  • Salt to taste
  • Fresh or dried oregano
  • Paprika
  • 2 lt (8 cups) beef broth or water


  • Step 1 – Heat oil in a saucepan and add the grilled beef cut into strips and the chopped garlic.
  • Step 2 – Add onion, carrot and bell pepper and cook for a few minutes. Season with salt, paprika and oregano.
  • Step 3 – Add potatoes and beef broth or water.
  • Step 4 – Cook until the potatoes are soft (about 15 minutes).
  • Step 5 – Reduce heat and add eggs, poaching them one at a time. Tip: use a ladle to poach eggs to prevent them from breaking.
  • Step 6 – Spoon into bowls with a poached egg on top. Sprinkle with parsley and merkén (smoked red chili flakes).
