Step 2 – Clean and wash the clams. Tap them lightly and place each clam in the middle of a shell that has been set aside. Place them on a baking tray.
Step 3 – Drizzle a little wine or sherry over the clams, season with salt and pepper and top with pieces of butter and grated cheese. Grill the clams in the oven for 5 to 6 minutes or until the clams turn pink. Garnish with chopped parsley and serve hot.
