Marinated Rabbit

INGREDIENTES

  • 3 tbsp oil
  • 4 large rabbit legs, bone out
  • 4 onions, quartered
  • 4 carrots, cut into thin rounds
  • 2 bay leaves
  • 4 cloves
  • Salt and pepper to taste
  • ½ cup white wine
  • ½ cup white wine vinegar
  • ½ cup oil
  • 1 tbsp brown sugar

INSTRUCCIONES

  • Step 1 – Heat the oil in a pan over medium high heat and brown the rabbit pieces. Remove and set aside.
  • Step 2 – Preheat oven to 180°C (350°F).
  • Step 3 – Make the marinade in a large oven-safe pot or dish. Layer the onions, carrots, rabbit pieces, bay leaves, cloves, salt and pepper. Drizzle with wine, vinegar and 1/2 cup of oil. Sprinkle sugar on top. Cover and bake for 1 1/2 hours or until the rabbit is very tender.
  • Step 4 – Remove the pot or dish from the oven and let the marinade cool overnight. Serve the marinated rabbit cold with the vegetables from the pot.
