Meat and Chicken Stew

INGREDIENTES

  • 1 kg (2 lbs 3 oz) beef round, in pieces
  • 2 kg (4 lbs 6 oz) meaty beef bones
  • 1 whole chicken, portioned
  • 1 onion, diced
  • Salt and pepper to taste
  • 2 chicken stock cubes
  • 1 kg (2 lbs 3 oz) cooked “mote” (wheat berries)
  • 2 or 3 tbsp oil
  • 3 spring onions, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 or 2 tbsp cilantro, finely chopped
  • 1 kg (2 lbs 3 oz) potatoes, cooked and peeled
  • Cilantro leaves to decorate

INSTRUCCIONES

  • Step 1 – Place beef, meaty bones, chicken, onion, salt, pepper and stock cubes in a large saucepan and cover with plenty of cold water. Cook on medium heat until the meat is tender (about 1½ hours). Stir occasionally.
  • Step 2 – Add cooked wheat berries and continue to cook until the meat starts to fall off the bone.
  • Step 3 – Remove the saucepan from the heat and strain the broth to discard the bones. Return the strained broth to the saucepan and add everything back in except the bones.
  • Step 4 – Heat oil in a frying pan and sauté spring onions, garlic and cilantro.
  • Step 5 – Add this sauté to the soup and cook on low heat. Add more water if necessary.
  • Step 6 – Add potatoes, torn in half, and continue to cook until the soup returns to a boil.
  • Step 7 – Serve the stew into individual bowls and decorate with whole cilantro leaves.
