Step 1 – Place beef, meaty bones, chicken, onion, salt, pepper and stock cubes in a large saucepan and cover with plenty of cold water. Cook on medium heat until the meat is tender (about 1½ hours). Stir occasionally.
Step 2 – Add cooked wheat berries and continue to cook until the meat starts to fall off the bone.
Step 3 – Remove the saucepan from the heat and strain the broth to discard the bones. Return the strained broth to the saucepan and add everything back in except the bones.
Step 4 – Heat oil in a frying pan and sauté spring onions, garlic and cilantro.
Step 5 – Add this sauté to the soup and cook on low heat. Add more water if necessary.
Step 6 – Add potatoes, torn in half, and continue to cook until the soup returns to a boil.
Step 7 – Serve the stew into individual bowls and decorate with whole cilantro leaves.
