3 tbsp breadcrumbs or ½ small baguette soaked in milk
Salt and pepper to taste
1 tbsp dried oregano
½ tsp ground cumin
½ red bell pepper, diced
1 carrot in batons
1½ liters (6 cups) chicken or beef broth
4 medium potatoes, peeled
4 pieces of squash or pumpkin, skin removed
1 or 2 ears of corn cut into 4 pieces
1 cup of green beans, julienned
INSTRUCCIONES
Step 1 – Heat some oil in a frying pan and sauté the onion and garlic until golden. Add chopped parsley. Set aside.
Step 2 – Place the ground beef, egg, breadcrumbs or soaked bread, salt and pepper and sauté in a bowl. Combine well.
Step 3 – Shape meatballs with floured hands. Set aside.
Step 4 – Heat remaining oil in a saucepan on medium heat. Brown the meatballs. Add the remaining onion, oregano, cumin, bell pepper and carrot to the pan and stir.
Step 5 – Add chicken or beef broth. Bring to a boil and cook for 8 to 10 minutes.
Step 6 – Add potatoes and squash or pumpkin and cook for 10 more minutes. Add corn ands green beans and cook for 10 to 15 more minutes.
Step 7 – Serve hot, sprinkled with chopped parsley.
