Meatball Stew

INGREDIENTES

  • 2 tbsp oil
  • 1 onion, diced
  • 1 garlic clove, finely chopped
  • 1 tbsp parsley, finely chopped
  • 500 g (1 lb 2 oz) ground beef
  • 1 egg
  • 3 tbsp breadcrumbs or ½ small baguette soaked in milk
  • Salt and pepper to taste
  • 1 tbsp dried oregano
  • ½ tsp ground cumin
  • ½ red bell pepper, diced
  • 1 carrot in batons
  • 1½ liters (6 cups) chicken or beef broth
  • 4 medium potatoes, peeled
  • 4 pieces of squash or pumpkin, skin removed
  • 1 or 2 ears of corn cut into 4 pieces
  • 1 cup of green beans, julienned

INSTRUCCIONES

  • Step 1 – Heat some oil in a frying pan and sauté the onion and garlic until golden. Add chopped parsley. Set aside.
  • Step 2 – Place the ground beef, egg, breadcrumbs or soaked bread, salt and pepper and sauté in a bowl. Combine well.
  • Step 3 – Shape meatballs with floured hands. Set aside.
  • Step 4 – Heat remaining oil in a saucepan on medium heat. Brown the meatballs. Add the remaining onion, oregano, cumin, bell pepper and carrot to the pan and stir.
  • Step 5 – Add chicken or beef broth. Bring to a boil and cook for 8 to 10 minutes.
  • Step 6 – Add potatoes and squash or pumpkin and cook for 10 more minutes. Add corn ands green beans and cook for 10 to 15 more minutes.
  • Step 7 – Serve hot, sprinkled with chopped parsley.
