Step 1 – Make the caramelized milk: Place the milk, sugar and vanilla pod in a large saucepan and bring to a boil.

Step 2 – Reduce heat and simmer for 50 to 60 minutes unti it begins to thicken. Stir constantly to prevent sticking.
Step 3 – Check the consistency by spooning out a small portion onto a clean plate and leaving it to cool. For a thicker consistency, cook for longer.
Step 4 – Make the dough: Preheat oven to 180ºC (350ºF). Sift the flour, baking powder and a pinch of salt into a bowl.
Step 5 – Make a hollow in the middle and add the remaining ingredients. Mix by hand and knead until the dough is smooth.
Step 6 – Roll out the dough to a 3 mm (1/10 in) thickness. Cut into circles with a 6 cm (2.5 in) diameter and prick with a fork. Place circles on a baking tray and bake for 5 minutes. Cool on rack.
Step 7 – Assemble the pastries: Use a pastry bag to squeeze manjar onto one side of a pastry and cover with a second circle. Sprinkle with icing sugar and serve.
