Step 1 – Soak the dried peaches in 3 cups of cold water with the cinnamon and orange rind overnight.
Step 2 – The next day, cook the dried peaches and their juices in a pot for 30 minutes or until the peaches are tender. Remove the pot from the heat and set aside.
Step 3 – Make a dark caramel in a pan using the sugar and a small amount of water. Pour the caramel into the pot with the hot peaches and stir until the caramel dissolves. Let cool and refrigerate for 4 hours.
Step 4 – To serve, place 2 peaches and 3 tablespoons of cooked wheat berries into tall glasses or dishes and cover with the cooking liquid. Serve very cold.
