Step 1 – Place the orange peel and orange juice in a pot with the wine, sugar, cinnamon, cloves, nutmeg and 1 lt cold water.
Step 2 – Boil for 3 minutes. Reduce heat and add the pears. Cover and cook over low heat for 30 to 45 minutes until the pears are soft, turning them so that they cook uniformly.
Step 3 – Carefully remove the pears, then place in a bowl and set aside.
Step 4 – Bring the liquid to a boil again over medium heat for 10 minutes or until slightly thickened. Pour the liquid over the pears in the bowl and refrigerate. Serve the pears with the syrup.
Step 5 – Note: This can also be prepared in pieces or balls and served in portions. Be sure to reduce the cooking times so that the pears retain their shape.
