Pigs’ Feet Salad

INGREDIENTES

  • 4 pig feet
  • 1 sprig of parsley
  • 1 large onion, cubed
  • 3 tbsp cilantro, finely chopped
  • 2 large tomatoes, chopped
  • ½ green bell pepper, cubed
  • Juice from half a lemon
  • 3 garlic cloves
  • Salt and pepper
  • Oil
  • Red chili paste

INSTRUCCIONES

  • Step 1 – Wash pigs’ feet and carefully pass them over the flame on the stove to singe off any hairs.
  • Step 2 – Cut the feet in half lengthwise and cook in plenty of boiling water with a parsley sprig for 1 hour.
  • Step 3 – Remove pigs’ feet from the water, debone and cut into cubes. Place in a bowl.
  • Step 4 – Add onion, garlic, bell pepper and chopped cilantro. Stir well and add chopped tomatoes.
  • Step 5 – Dress with oil, salt, pepper, lemon juice and chili paste to taste.
