Pork Roll

INGREDIENTES

  • 1½ kg (3 lbs 5 oz) pork loin or other lean cut
  • ½ cup red wine vinegar
  • 4 garlic cloves, finely chopped
  • 1 tbsp ground cumin
  • 1 tbsp chili paste
  • 1 tbsp dried oregano
  • Salt and pepper to taste
  • Large piece of pork skin

INSTRUCCIONES

  • Step 1 – Chop pork into long thin strips and place them in a large container.
  • Step 2 – Marinate with vinegar and remaining seasonings. Mix well. Refrigerate for 1 to 2 hours.
  • Step 3 – Spread out the pork skin on a smooth surface and place the marinated pork on top.
  • Step 4 – Roll the skin up tightly around the pork strips. Tie with string and refrigerate for 24 hours.
  • Step 5 – Place the roll in a saucepan and cover with water. Bring to a boil, reduce heat and simmer for 1 to 2 hours, or until the meat is tender.
  • Step 6 – Remove the roll from the water and cool before slicing. Serve at room temperature.
