Step 1 – Wash the potatoes and the carrot. Place them in a pot with salted water and cook over medium heat for about 15 minutes or until soft. Remove from water and leave to cool.
Step 2 – Peel and cube potatoes and carrot. Place in a bowl with the onion and peas. Add the cold water and stir to separate the potatoes.
Step 3 – Dress with salt, lemon juice and oil.
Step 4 – Add cilantro and stir.
Step 5 – Decorate with hard boiled egg pieces and black olives.
