1 kg (2 lbs 3 oz) smoked pork chops, cut into pieces
1 kg (2 lbs 3 oz) smoked sausages, cut into pieces
1 lt (4 cups) white wine
1 ¾ cups white wine vinegar
1 tsp ground cumin
Salt and pepper to taste
2 or 3 bay leaves
8 or 10 chicken legs
INSTRUCCIONES
Step 1 – Sweat the onions in a small amount of oil in a pan until translucent, then set aside.
Step 2 – Place the thin strips of onion in a large pot. Place the ribs on top, followed by the fried onion, heads of garlic, pork chops and sausages. Pour in the wine, vinegar and other seasonings.
Step 3 – Cover the pot and cook over low heat for 1 1/2 hours. Uncover and add the chicken. Cover and cook for another 30 minutes. Correct the seasoning and serve the stew very hot in large bowls.
