Seafood Sauce

INGREDIENTES

  • 4 tbsp unsalted butter
  • 3 tbsp white onion, cubed
  • 1 tsp whole black pepper
  • 1 garlic clove
  • ¼ bay leaf
  • 2 tbsp flour
  • 2 cups broth from cooking mussels
  • Clams and abalone
  • 3 clean calamari, cut into rings
  • 3 abalone, cooked and cubed
  • ½ cup shrimp tails
  • ½ cup steamed mussels without the shells
  • ½ cup cleaned clams without the shells
  • 12 cleaned raw or canned macha clams
  • 1 cup cream

INSTRUCCIONES

  • Step 1 – Melt a tablespoon of butter in a pan. Sweat the onion and garlic, pepper and bay leaf.
  • Step 2 – Add the flour and mix with a wooden spoon without letting it take on color. Add the cold broth and stir vigorously using a beater. Cook for 5 minutes over low heat. Season with salt and set aside.
  • Step 3 – In a separate pan, sauté the shrimp in 1/2 tbsp of butter. Add the seafood and sauce. Add the cream and cook until you reach the desired consistency.
  • Step 4 – Finally, add the rest of the cold butter and mix until fully blended.
  • Step 5 – Correct the salt and sprinkle with a small amount of chopped parsley.
  • Step 6 – This sauce is traditionally served with grilled sea bass. May be served with rice.
