Shrimp Stuffed Avocado

Shrimp Stuffed Avocado | Marca Chile

INGREDIENTES

  • 2 ripe avocados
  • The juice of half of one lemon
  • Salt and pepper to taste
  • 1¼ cups shrimp, peeled and cooked
  • 1 cup mayonnaise
  • ½ canned pepper, finely chopped
  • 2 tbsp green onion or chives, finely chopped
  • 1 head of Spanish lettuce, cut into thin slices
  • Pitted black olives for garnish

INSTRUCCIONES

  • Step 1 – Cut the avocados into halves, pit and peel. Drizzle each half with lemon juice and season with salt and pepper, then set aside.
  • Step 2 – Mix the shrimp, half of the mayonnaise, pepper, spring onion or chives, salt and pepper in a bowl.
  • Step 3 – Fill the avocados with the mixture.
  • Step 4 – To serve: Place lettuce leaves on a plate and place the stuffed avocados on the lettuce. Garnish with olives and mayonnaise. Serve cold.
