Step 1 – Heat oil over high heat in a large pot. Seal the rabbit pieces on all sides, then remove and set aside.
Step 2 – In the same pot, sauté the garlic with the onion, carrot and parsley for 2 to 3 minutes. Add the reserved rabbit pieces and add 1 to 2 cups of boiling water. Season with salt, pepper, tumeric and cumin. Cover and cook over low heat for 1 hour, stirring occasionally.
Step 3 – While the rabbit cooks, peel the boiled potatoes and, once the rabbit is tender, grind the potatoes using your hands. Add to the rabbit mixture. Stir and serve the rabbit pieces sprinkled with cilantro with cooked rice. Serve hot.
