2 (180 g / 6 oz each) cans of tuna in water or oil
1 cup mayonnaise, ½ canned bell pepper, finely chopped
2 tbsp green onion or chives, finely chopped
1 head of Spanish lettuce, cut into thin slices
Pitted black olives for garnish
INSTRUCCIONES
Step 1 – Cut the avocados into halves. Pit and peel. Drizzle each half with lemon juice and season with salt and pepper, then set aside.
Step 2 – Mix the tuna, half of the mayonnaise, bell pepper, green onion or chives, salt and pepper in a bowl.
Step 3 – Fill the avocados with the mixture.
Step 4 – To serve: Place lettuce leaves on a plate and place the stuffed avocados on the lettuce. Garnish with olives and mayonnaise. Serve cold.
Step 5 – Versions of Stuffed Avocado – Cousiño Avocado: Replace the tuna with 3-4 cooked abalone cut into small cubes. Empress Avocado: Replace the tuna with 1 1/2 c cooked and shredded crab. Bishop Avocado: Replace the tuna with 1 1/4 c cooked octopus in small cubes. Princess Avocado: Replace the tuna with 1 1/2 c cooked and shredded turkey.
