Stuffed Potatoes

Stuffed Potatoes | Marca Chile

  • 1 kg (2 lbs 3 oz) potatoes, peeled and cubed
  • Salt and pepper to taste
  • 2 or 3 tbsp oil
  • 2 onions, finely chopped
  • 1 garlic clove, finely chopped
  • 500 g (1 lb 2 oz) ground beef flank
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Oil for frying
  • ½ cup flour
  • 4 hard boiled eggs, cut into quarters


  • Step 1 – Cook the potatoes in a generous amount of salted water in a pot until they are soft. Once they are cooked, strain and mash. Let cool while you prepare the meat filling.
  • Step 2 – For the filling: Heat the oil in a pan over medium heat and sweat the onion and garlic until the onion is translucent. Add the meat, cumin, oregano, paprika, salt and pepper. Cook, stirring, until the meat is cooked. Remove from heat and let rest until cooled, then set aside.
  • Step 3 – Heat the oil in a pot for frying.
  • Step 4 – To put together the stuffed potatoes: Flour your hands and then take a small amount of the reserved mashed potatoes and flatten with your hand. Add 1 tbsp of the meat filling and a quarter of a hard boiled egg to the center. Add a little more mashed potatoes over the filling and close the potato, wrapping up the filling. Use a small amount of flour to keep the potato from sticking to your hands.
  • Step 5 – Fry the stuffed potatoes in hot oil until they are golden on both sides. Place on paper towels and serve.
