Step 1 – Sift the flour, baking powder and icing sugar onto a clean surface. Make a hollow in the middle of the flour mixture and add the butter, whole egg, egg yolks, grated lemon rind and aguardiente or pisco.
Step 2 – Combine all ingredients into a dough, without kneading.
Step 3 – Roll out the dough to 1/2 cm (1/5 in) thickness and cut into 5×9 cm (2×3½ in) rectangles.
Step 4 – Cut a slit down the center of each rectangle. Pass one end of the dough through the hole and gently pull it out the other side.
Step 5 – Deep fry, a few at a time, until lightly golden. Remove excess oil with a paper towel.
Step 6 – To serve, sprinkle icing sugar on top. Serve hot with palm syrup.
