Wheat Berry Salsa

INGREDIENTES

  • 1 cup dried wheat berries
  • 4 cups water
  • 2 tbsp olive oil
  • 3 tbsp white onion, cubed
  • 1 clove garlic
  • 2 cups chicken broth or water
  • 2 tomatoes, seeded and cubed
  • 1 green chili pepper, seeded, cleaned and finely chopped
  • ¼ white onion, cubed
  • ½ cup cilantro leaves, finely chopped
  • Dried oregano to taste
  • Ground cumin to taste
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt to taste

INSTRUCCIONES

  • Step 1 – Wash the wheat berries and then soak in a generous amount of cold water for 3 hours, then drain and set aside.
  • Step 2 – Sweat the onion and garlic in oil in a pot. Add the wheat berries.
  • Step 3 – Add the chicken broth and cook for 20 minutes. Remove from heat, set aside and let rest until cooled.
  • Step 4 – Mix the cooked wheat berries with the tomato, chili pepper, onion and chopped cilantro in a bowl.
  • Step 5 – Season with oregano, cumin and salt. Add a small amount of vinegar, mix well and then add the olive oil. Serve cold.
