Step 1 – Wash the zucchini, cut off the top and bottom and peel two of them. Cut all of the zucchinis in four lengthwise and remove the pulp with a spoon. Roughly chop the pulp and set aside. Cut the zucchinis evenly into 1 cm wide pieces, then set aside.
Step 2 – Soak the bread in the milk in a separate bowl, then blend using a spoon or your hands and set aside.
Step 3 – Sweat the onion with the garlic, bell pepper and carrots in a pan in a small amount of oil. Add the ground beef and cook for a few minutes. Season with paprika and salt to taste. Cook half of the pulp and the zucchini pieces in a pot for 5 minutes over a low heat.
Step 4 – Finally, add the soaked bread, removing the excess milk. Mix well and cook until the zucchini is tender.
Step 5 – Correct the salt and serve hot. Optional: Sprinkle grated cheese on top to taste.
Step 6 – Serve with white rice and homemade fried potatoes.
