Chef and Owner of Boragó Restaurant
Rodolfo Guzmán is the chef and owner of the world-famous Boragó Restaurant, which was chosen as the world’s most sustainable restaurant in 2021 and number 38 out of the World’s 50 Best Restaurants.
Having studied and trained in some of the most important restaurants in Chile and Europe, he created Boragó in 2006 and has introduced numerous new techniques and Chilean products and ingredients to the world since then. His cooking is based on in-depth knowledge of Chile and its ingredients. He works with over 200 producers and gatherers from throughout the country. Guzmán and his team have documented the uses and properties of Chile’s endemic food products, including ingredients that had never been considered, such as the Mapuche people’s centuries old foods. Boragó was included on the list of the World’s 50 Best Restaurants for the first time in 2015 and has now been included on it for five consecutive years.
